I’ve got the perfect Christmas cocktail for you!

I’ve got the perfect Christmas cocktail for you! Made with…apple sauce of all things! An Apple Pie Whisky Cocktail! Perfect with your Christmas roast dinner or really just because.

Ingredients
60 ml whiskey
30 ml Cointreau
⅓ cup @barkersofnz apple sauce
2 tbsp lemon juice
2 tbsp cinnamon simple syrup (directions below)
ice for shaking

To Make:

Cinnamon Simple Syrup
For the simple syrup, mix together ½ cup of boiling water, 1 tbsp brown sugar (or caster sugar) and 1/2 tbsp ground cinnamon. Combine well and set aside until you're ready to use.

For the cocktail
Combine all ingredients into a cocktail shaker with a generous amount of ice. Shake well for 30 seconds to a minute.
Use a sieve to strain the cocktail and pour into two glasses. Serve with a slice of apple and touch of lemon rind for that special touch.

Fruit mince cinnamon swirls!

Layers of flakey golden puff pastry encase lashings of @barkersofnz fruit mince, almond butter and cinnamon for these swirls. Ready in 30 minutes, they are the perfect quick and easy treat. A cute spin on traditional fruit mince pies but a lot less complicated.

Christmas cheese platter sorted this year…

It starts with a golden, garlic butter drenched Cobb loaf. The centre lined with sweet lashings of @barkersofnz Cranberry Jelly, and filled with a rosemary pistachio baked Brie.

All you have to do is peel back those crunchy slices of salty garlic bread to dive into the soft and gooey baked Brie centre and your day will be made. It is THAT good.

You will want to “test” this recipe many, many times before you reveal it to you family, it’s a bit too good to share 😉
