
These healthy banana oat pancakes are my favourite Sunday morning breakfast. Not only are they super easy to make, they are high in natural protein, naturally sweetened, gluten and dairy free. No guilt pancakes? Yes please!
The best thing about these pancakes (aside from their deliciousness) is that you just chuck all the ingredients in your blender and voila! Less time spent washing up and more time spent eating. Now that is the best type of cooking if you ask me!
If you’re like me and have a sweet tooth in the mornings you are going to love these fluffy pancakes. I serve my pancakes with peanut butter, banana (my favourite go to combo) and yoghurt. And don’t forget that drizzle of maple syrup!

Healthy Banana Oat Pancakes
Ingredients
- ⅔ cup rolled oats
- 2 eggs
- 1 ripe banana
- ½ tsp baking powder
- 1 tsp vanilla bean paste
Instructions
- Place all ingredients in a blender and mix on high until combined.
- Heat a non-stick fry pan (or lightly spray pan with oil) on medium heat. Mixture makes 8 pancakes approximately, pour batter onto fry pan and cook until bubbles have formed.
- Flip pancakes and cook on the other side for 1 min or until cooked through.
- Serve with your favourite toppings. I serve with peanut butter, banana, mixed seeds/muesli and a drizzle of maple syrup.
